I have a question regarding the usability of the camera.
Does the infrared show as a red light to the animals? In the past, I have used a trail camera for capturing video of animals. These cameras have a infrared LED that glows when the motion sensor is activated and the camera is on. The animals see this and it takes some time for them to get use to it. I am curious whether the Hawk Eye Extreme has a light on it and how bright it is. Also, if there is a way to turn it off.

No, the infrared LEDs on the Hawk Eye, do not glow red. They are entirely invisable to man and beast. They put out near infrared light vs. the red far infrared light you speak of. Because the IR on the Hawk Eye is invisible, there is no need to have a switch to turn it on or off.
